Midweek Supper

A casserole is a great one dish meal and a fab way to use up leftover vegetables .. Here I browned sausages, and some leftover bacon with onions and garlic. In went loads of random veggies like mushrooms, celery, that lonely carrot and a few baby roast potatoes from yesterday’s dinner. Added a can of tomatoes, some dried pasta, fresh herbs , some chicken stock, a generous swig of Worcester sauce and a pinch of garam masala and smoked paprika, with salt and pepper. Finally in went that little bit of red wine and a can of washed butter beans. Covered and cooked for 20 mins and dinner was ready with minimum fuss and maximum taste and my empty vegetable tray was delighted too.. #midweekdinner #onedishmeals #winterwarmers #easysupper #homemadehappiness #surreyfoodie
