When the Portuguese conquered Goa

When the Portuguese conquered Goa, they brought with them wondrous meats such as Pork and flavours such as Vin or vinegar. Using chillies and Alhos or garlic thus was born the Vind’alho or Vindaloo as we know it. Contrary to popular belief a true Vindaloo is cooked slowly with Kashmiri red chillies which give it the colour rather than fiery heat. The vinegar and spices coupled with palm sugar give it the perfect balance of sweet, sour and heat and ideally a vindaloo needs to be kept for 24-48 hours for the flavours to develop. The Portuguese kept it for months in large barrels.. I’m starting on my vindaloo today for tomorrow’s Lunch.. It’s currently brown now but as it slowly cooks it should become the fiery red colour and develop perfect flavours for us to enjoy. #authentic #surreycaterer #indianinguildford
