It’s pumpkin time… Three easy recipes from us so you don’t waste the inside of those scary masks by the door…

1. Pumpkin soup made by sautéing onion and garlic with pumpkin. Add stock and cook for 10 mins. Blend, season and add some cream , nutmeg, and crispy fried bacon if you fancy.

2. Pumpkin halwa made by cooking down the pumpkin with full fat milk. Add sugar, ghee, dry fruits and a hint of powdered cardamom powder. Stir and cook till sticky and the mixture leaves the side of the pan.

3. Pumpkin stir fry made by heating ghee and tempering Indian five spice powder. Cooking the pumpkin with some fresh ginger, turmeric powder , chilli and salt until coked. Add some baby prawns and enjoy with steamed rice.
