Tandoori Chicken?

In 1968 my parents got married after a fairy tale romance and wedding on a tea plantation in Assam. Every evening in the following months, my dad would ask his beautiful 20 year old bride what’s for dinner and on most days she would respond saying we are going to my parents’ place for dinner… And off they would go to the next tea garden where my grandparents lived and come back after a wonderful meal cooked / supervised by my grandmother who is a fantastic cook. After this had gone on for a while my dad realised that his wife had never stepped into the kitchen and had no idea how to even make a cup of tea. All her life, she had seen the tea trolley being wheeled in and tea being poured out – so she was blissfully unaware as to whether you boiled the water and added the tea or vice versa.. Anyway on his next trip to Calcutta, my dad bought her a copy of Balbir Singh’s cookbook and gave it to her with an inscription saying “Manjoo please help me out and learn to cook”.. 50 years later, my mother is one of the most amazing cooks I know.. (Although she still doesn’t enjoy cooking and would prefer to take my dad to my grandmother’s). Meanwhile I have a photocopied version of her original cookbook and still swear by it…
